Roast Chicken with a Honey Spiced Glaze

What you need...

1 whole chicken
2 crushed garlic cloves 1 chopped onion
1 lemon
A few sprigs of thyme

1 tbsp Forever Bee Honey
1⁄2 tsp of ground ginger
1⁄2 tsp of ground cinnamon
Salt and pepper



Pre-heat oven to 200°C (180°C for fan-assisted ovens).

To make the glaze : mix the honey, ground ginger, ground cinnamin and the juice of a small lemon and season lighly. Set lemon halves aside.

Stuff the cavity of the chicken with the chopped onion, crushed garlic, lemon halves and thyme. Brush the glaze all over the chicken, then season with salt and pepper.

Place chicken in a roasting pan, breast side up and pour in half a cup of water to stop it drying out (tip: use to make a lovely gravy at the end).

Cook for 45 minutes per kilogram plus 20 minutes, basting occasionally (add more water if you nd it drying out too much). You’ll know it’s ready when the juices from the thigh run clear and the chicken has turned a nice golden brown.

Allow to rest for 10 minutes before carving and use the juices in the roasting pan as a gravy. Serve with steamed vegetables and salad, plate up and enjoy!
